  • Bagged Lunch Program - Purchase food and pack 35-100 lunches including a sandwich, snack, drink, and fruit. Please drop off by 9:30 AM or the night before. Please contact Michele Marshall for schedule.

  • Plan menus with an emphasis on healthful nutritious foods
  • Include a heart-healthy or light fare entree alternative
  • Include fresh vegetables and fruit
  • Use whole wheat breads and pastas whenever possible
  • Use fruit juices, iced tea, milk or water instead of sodas
  • Due to health issues, we would like to limit the amount of desserts that we make available for our clients. For this reason, we ask that you consider the following in place of desserts.
    • Cheese/nuts
    • Fresh fruit/fruit cocktail
    • Jell-O/pudding
    • Sherbet/sorbet
    • Yogurt
    • Granola with dried fruit
  • Light House Casserole Program
    Please use a standard-sized aluminum pan* so that more than one will fit in our oven
    for re- heating. Pans this size can also be placed directly into our steam table to keep the food at the correct temperature. The casseroles will be used for breakfast and dinner when needed. Please date and label your pan with a large Sharpie marker so that it can be easily recognized in our freezer.

    *Our kitchen has commercial equipment and the standard sheet pans we use are
    18" x 12" x 2", these are not readily available in the local supermarket — the nearest
    readily available sixe is 17 ⅛" x 12 ⅝" x 2 ½" (Handi-foil rectangular King Roaster).
    These are available at Sam’s club in multi-packs.

    Each recipe provides a meal for 30 people.
